THE EASTER BEAST

A "HARE" A "RABBIT" A "BUNNY" WHATEVER YOU WANT TO CALL HIM,  THE EASTER BEAST WAS FIRST USED AS SACRIFICE TO THE THE GODDESS EOSTRE BY THE ANGLO-SAXONS. THE EASTER BEAST WAS SEEN AS A SYMBOL OF FERTILITY, RENEWAL &  THE RETURN OF SPRING.

THE FIRST EDIBLE BUNNIES WERE MADE IN GERMANY IN THE 1800's AND WERE MADE OF PASTRY & SUGAR...

THE EASTER BEAST WAS  INTRODUCED TO THE AMERICAS BY GERMAN SETTLERS IN THE 1700's.

WHY ANYONE WOULD ACCACIATE A RABBIT WITH EGGS TO ME IS JUST A SILLY CONCEPT AND EVEN AFTER READING ABOUT THE ORIGIN OF "THE EASTER BUNNY" IT STILL MAKES NO SENSE...AND WITH THAT SAID I HAVE COME UP WITH A CONCEPT WHICH DOES MAKE SENSE...A EASTER BUNNY STEW.

                                                                                                                                                          FIRST THE EASTER BEAST MUST BE CAUGHT...WHICH AS FAR AS I AM CONCERNED IS THE BEST PART OF THIS RECIPE.


YES THIS EASTER BEAST DID PUT OP A GOOD FIGHT BUT IT WAS NO MATCH FOR THE SWIFTNESS AND AGILITY OF A GINGER CAT...

AFTER THE EASTER BEAST IS CAUGHT WE PASS IT ON TO THE HUMANS FOR PREPARATION...AFTER ALL WE DON'T KEEP THE HUMANS AROUND FOR THEIR PRETTY FACES...WE PUT THEM TO WORK.

                                           THE INGREDIENTS

1 Rabbit, about 3 pounds cut up (The Easter Beast)
1/2 cup of all purpose flour
3 table spoons butter
1 cup chopped celary
2 med onions thinly sliced
1 tea spoon seasoned salt
1 tea spoon regular salt
dash of pepper
1 bay leaf
2 cups water
2 cups dry white wine ( I prefer to use full fat milk instead *meow)
2 cups diced carrots
2 medium potatoes peeled & diced
4 ounces diced mushrooms
1/4 cup all purpose flour
1/3 cup of water


                                               THE PREPARATION

Dredge pieces of the Easter Beast in 1/2 cup flour, melt butter over medium heat;
Brown the pieces of the Easter Beast on all sides. add celery & onions, salt, pepper & bay leaf, 4 cups water and wine (or full fat milk) & bring to the boil. reduce heat to a simmer. Cover and simmer for 2 hours.
Add carrots, potatoes and mushrooms, cook fo a further 25 minutes or untill vegetables are tender. Combine 1/4 cup flour 7 1/3 cup water. stri untill well blended, stir flour mixture into broth, cook & stir untill thickned.
